Power Protein Bites

I’m amazed how easy these are to make and how well they fill you up and sustain you until lunch time. Even my husband who is not a fan of coconut loves these!

Individually wrap these and grab a piece of fruit for breakfast or grab as quick snack if you need one during the day.


1/2 cup coconut (unsweetened or sweetened)

1/2 teaspoon sea salt

1/2 cup oat bran

1/2 cup dried cranberries or apricots (or 1/4 cup of each)

1/2 -2/3 cup of peanut butter or other nut butter of your choice (add to taste and enough to form a ball)

1-2 teaspoon honey

Your dried fruit choice does change the taste. Change it up when you make these for something new!


Combine first 4 ingredients in a food processor. Pulse until blended. Pour into a bowl and mix in peanut butter and honey until blended. Form into bite size balls. Store in a container separating layers with wax paper or individual snack size bags for easy grab and go snacks or breakfast item. Store in refrigerator.
