Cinnamon Baked Oatmeal
When I was younger I wasn’t much of an oatmeal fan. The instant oatmeal packets had a strange fake taste to me and plain oatmeal just wasn’t doing it for me. So I’m not sure what inspired me to order baked oatmeal from a coffee shop but I did and it was delicious! But I could tell it had a ton of sugar and calories in it. I wanted something I could feed to my family that was quick to warm up in the morning without so many calories.
I modified this recipe a few times to see how much I could get the sugar down. Here is the recipe I use right now. It’s delicious just like this and worth trying first. At around 310 calories per serving (without extra milk) you could see after your first batch if you can cut back even more on the coconut oil and sugar and still have your family enjoy it.
BAKED CINNAMON OATMEAL RECIPE
3 Cups Quick Oats
1/2 Cup Brown Sugar
2 teaspoons Baking Powder
1 teaspoons Salt
1 teaspoons Cinnamon
1 cup Milk (I use almond milk (plain or vanilla) but you could also use cow’s milk
1/2 cup Coconut Oil
Measure coconut oil and place in a mixing bowl. Microwave until melted. Add all other ingredients. Mix until blended. Place in a greased 9×13 casserole dish. Cook at 350 degrees for 26-28 minutes or until outside edge is crispy brown. Cut into 8 squares. Serve in a bowl, breaking up the piece with a spoon and adding additional milk if desired.
Makes 8 servings.
Once cooled I individually wrap pieces and keep in the refrigerator to warm up in the morning. Makes breakfast super quick and easy!
